Tomato and Peach Basil Salad

I don’t know what happened, but my tomatoes are late this year.  I’ve harvested two.  It may be due to the fact that we moved, and I am off on timing this year?  However, if you’re on track, then you’re probably having the “what in the heck do I do with all of my tomatoes?” quandary.  If so, then check out this amazingly simple salad.  You can whip it up in less than 5 minutes. I have done some different variations of this salad years ago, but I recently received a Sparkpeople.com recipe in my inbox, very similar to the one I’ve done, and it reminded me to post it!   Thanks to some generous tomato donations by my friend Elisa, I made this a few times up at my cabin this weekend, and each time, it was gone in a flash.  It’s sweet, savory {basil from my garden–woop woop!} and a bit tangy with the vinegar and feta.  And EAS-y!  I was just about to snap a photo when my camera’s battery died on me, so I snapped this with my phone.  It’s moderate at best!  But the taste?  Phenomenal.   Nutrition-wise, this is great for a serving of fruit and veggies.  We paired it with a green salad {think 2 handfuls of veggies=meal serving size}, and grilled up some shrimp and chicken, and made it a wholesome meal.   Hope you enjoy!  {I am going to try some other fruit variations with this, as well as test out my pomegranate balsamic, and if they’re good, I’ll let you know!}

  1. 6-8 tomatoes, chopped
  2. 3 peaches, chopped
  3. 4 bunches of basil, chopped (approx 10-15 leaves)
  4. 1/4 c. feta
  5. 1-2 Tbsp olive oil
  6. 3 Tbsp red wine vinegar
  1. 1. Wash and chop the tomatoes and peaches. Place them in a medium bowl.
  2. 2. Wash and chop the basil. Add to the bowl.
  3. 3. Add the feta, olive oil and red wine vinegar.
  4. 4. Toss well and serve. Enjoy!
