Berry and Bleu Summer Salad

Barbecues and summertime. Two of my favorite things. 

I know many of you are looking to make healthy changes, and this is a perfect dinner on this journey. Grab a couple handfuls of greens, a palm-size of meat (that’s approx 2-4 chicken tenderloins), then top it with these delights to make your own masterpiece. 

Added delights:

  • red grapes
  • raspberries
  • strawberries, chopped 
  • crumbled bleu cheese 
  • almond slivers
  • balsamic vinaigrette 

This is my masterpiece…I am heading out to the patio to enjoy it as I snap this…

Per Plate
  1. 2 handfuls of greens
  2. 2-4 chicken tenderloins, cooked/grilled (portion=1 palm)
  3. 4 red grapes
  4. 4 raspberries
  5. 1 large strawberry, sliced
  6. 1 Tbsp bleu cheese
  7. 1 Tbsp almond slivers
  8. **Dressing**
  9. 1 tsp balsamic vinegar
  10. 1 tsp olive oil
  11. a sprinkle of oregano
  12. a sprinkle of pepper
  1. 1. Grill or cook the chicken.
  2. 2. Assemble the salad to your liking.
  3. 3. Drizzle the dressing on top.
