A couple of weeks ago, I was in Portland visiting my sis and her fam, and she took me to get my favorite food: crumpets and Trader Joe’s. But guess what? She introduced me to the next best thing…and it might even be the first best thing for you…COOKIE butter! Right there snuggled in with peanut, almond, and sesame butter, but better. Katy said I hadn’t truly lived (or something like that) until I had tried it, and boy, was she right.
It’s like when I was a kid, they called the cookie or jello dish a SALAD, only this is better!
Because it’s healthy.
After Scott and I devoured a jar of it, I searched online for someone who had tried their own. And I found a keeper!
She has beautiful photos and a delicious recipe that knocks Trader Joe’s version out of the park. I made both almond and cashew cookie butter. Check out the site, FoodieFiasco, I found the recipe. It’s worth the click.

Here are the ingredients. This one is for the cashew version.
And this one is for an almond one. They are both amazing.
Grab a food processor. I’ll tell you now that the cashews blended muuuuch faster. Put 2 cups of raw nuts into the processor. Blend away.
Keep scraping the sides of the dish, and blend til smooth. (The cashews took a minute or two. The almonds took 5-7, and my motor started smoking! But the almond cookie butter is a little sweeter.)
Add the rest of the ingredients and blend away. **i added extra of everything to the cashew version. You may need to taste test to see if it is sweet enough.**
I served with some pretzels, apples and bananas. It’s good on anything!
Or the almond version. (It is cheaper to buy raw almonds and is sweeter in flavor, but takes about triple the time to blend.)
- 2 cups of raw nuts (cashews or almonds)
- **the following ingredients I almost doubled for the cashew version. Add the amounts below, then taste, and double if necessary.)
- 2 tsp unfiltered dark molasses
- 2 tsp brown sugar
- 1/4 tsp cinnamon
- 1/8 tsp ginger
- 1/8 tsp nutmeg
- 1/8 tsp cloves
- Blend the nuts, scraping the edges, til smooth and creamy.
- Add the rest of the ingredients.
- Serve with pretzels, apples, bananas, and the like!
