Cinnamon Swirl Muffins

If you’re looking for a healthy rendition of a muffin, this is it. It is a light, fluffy, cinnamon-y treat that doubles as a snack or dessert! The almond flour gives it a bit of a nutty flavor. Add a little pecan butter to a toasty muffin, and you’ll get a glimpse of the menu in heaven!

I found this recipe off Comfy Belly. She has beautiful photos. I modified only a little, but check her out here.

here’s what you’ll need for the muffins:

  • 1/2 c. plain greek yogurt
  • 1/4 c. pure maple syrup
  • 2 eggs
  • 2 and 1/2 c. almond flour (my new favorite)
  • 1/4 tsp sea salt
  • 1/2 tsp baking powder

for the cinnamon topping

  • 2 Tbsp. cinnamon
  • 1/4 c. maple syrup
  • 2 Tbsp melted coconut oil
  • 1/4 c. your favorite nut, chopped

Add the muffin ingredients together. Mix well.


Line a muffin tin with liners. This is the part I didn’t read directions. But you should so you don’t have to make extra steps. fill the tins 1/2 full. . The original recipe said 8 muffins, but I got 12 out of the batch.


Now mix the cinnamon topping. Spoon a spoonful of goodness into each muffin. Then top with the remaining muffin batter. Give it an optional swirl w/ your spoon.



Bake at 310 for 20-25 minutes. You can use use the toothpick test for doneness.

  5. 1/4 tsp sea salt
  6. 1/2 tsp baking powder
Cinnamon Topping
  1. 2 Tbsp. cinnamon
  2. 1/4 c. pure maple syrup
  3. 2 Tbsp melted coconut oil
  4. 1/4 c. your favorite nut, chopped
  1. Mix muffin ingredients in a bowl.
  2. Line a muffin tin with liners.
  3. Fill the muffin liners halfway.
  4. Mix the cinnamon topping.
  5. Drop a spoonful of cinnamon topping onto each muffin.
  6. Top muffins w/ the rest of the muffin batter.
  7. Give the mix an optional swirl of the spoon.
  8. Bake @ 310 for 20-25 minutes.
