Chicken and Veggie Parmesan Pasta

Usually, at this time of year, a salad doesn’t sound so great. Warm comfort food is usually a dead winner for the palate. But, the dilemma is how to fit the veggies into the meals. Does anyone else struggle with making the veggie thing happen?

This one is suuuper easy, and packed with veggies. Add (or subtract) any veggies that will fit the bill for your dinner. Choose any meat to top, and voila, you’ve got a healthy, nutrient-packed quick din din.

1 jar of pasta sauce of choice
1 cup veggie pasta
Meat of choice (we did 4 links of chicken sausage)
Parmesan cheese, freshly grated
Veggies, all chopped
-brussel sprouts
-sweet peppers

Prep all the veggies.

Grab a pan and line it with a little pasta sauce. (This avoids cooking with oil.). Add the veggies, and cook on medium heat. Cook til they are slightly softened.


Meanwhile, cook the meat and the pasta according to pkg instructions.

Add the rest of the pasta sauce. Cook through.


Grab a bowl and add 1/4 c veggie pasta.


Top with the veggie mix.


Add the meat and fresh Parmesan cheese.
