Sharp Cheddar Brown Rice Egg Bake

Another egg recipe to give your dinner plans the ease we all love!  Oh, and it tastes reaaally good too.  I found it on eatingwell.com, and adapted it only slightly.

Here’s what you’ll need:

  • 3 tablespoons extra-virgin olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2-3 cups fresh spinach (or a frozen bag, chopped up)
  • 3 cups cooked brown rice
  • 1 cup diced extra-sharp Cheddar cheese
  • 1/2 teaspoon freshly ground pepper
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1/4 cup nonfat milk

Make the rice first, according to package directions.  Use 1 cup of dry rice, and that will yield 3 cooked.  You can also use your rice cooker, and load it in the am, and the rice will be ready by the time you get home.

Preheat the oven to 425.

Chop up the onions, and add them to a pan that’s lightly sprayed w/ olive oil spray.  Cook and stir until lightly browned.

Add the 3 garlic cloves and the 2 handfuls of spinach.  Cook until the spinach is just wilted. (should take only a couple of minutes)

Transfer the veggies into a bowl.

Add rice (3 cups), salt and pepper, and 1 cup of cheese (I packed it in like brown sugar!)  (this picture makes me salivate!  I LOOOVE this cheese.)

 

Whisk together the eggs and the 1/4 c milk.

 

Pour this in with the veggie mix.

 

Now add this to a sprayed 8 x 8 pan.

 Cook for about 25 minutes.  It will brown a little on the sides.  Yum yum!
