Greek Omelette Eggstravaganza

The egg recipes continue!  I’m on a kick. :)  This one is again, simple, easy, and very tasty.  Inspired by Eating Well, this one is unique and Greek.  And a great snack for the week.

Here’s what you’ll need:

  • 2 cups of fresh spinach
  • 5 eggs
  • 1/2 cup of feta
  • 2 scallions (which I didn’t have so I used regular yellow onion, approx 2 Tbsp)
  • 1.5 tsp dill weed (or 1 heaping Tbsp fresh dill)
  • fresh pepper, to taste

Grab a bowl, and add 2 big handfuls of spinach.  Tear them up into smaller pieces.  (If I can get out of chopping, I do at any expense, but you could chop these, too.)  Doesn’t the pic look fake?  But nope, it isn’t!  When I hear “photoshop,” I only think of the place where film is developed.  (do they still do that??) :)  I guess this is what a sunny, Sunday kitchen looks like in photos!

Add the feta.

Add 1/5 tsp of dill.  (or less)  Sidenote:  Do you see my red nail??  A huge change for my roughed up hands.  Love love it.

Now for a bit of an onion, about 2 T.

 Add some freshly ground pepper, and stir it up.

Grab a pie plate or a square baking pan, and spray it lightly.  Pour in the mix.

Okay, I don’t remember exaactly how long I baked it.  So try this:  Bake @ 350 for 25 minutes or until set.  It may have taken 35 minutes or so to bake.  Just try to jiggle it in the oven, and if it’s set and doesn’t move, it’s done.  It will brown a bit on top and on the edges.
