3 Ingred Dessert! Coconut Milk+Frozen Fruit+Blended=Blissful “Homemade Ice Cream.” Giveaways too!

I know!  What we’ve all been waiting for…dessert!  I just blended this up.  Perfect for a summer day or night.  This recipe is from my sis.  (pictured in the bio)

Grab your blender.  This makes one serving.

Now you’ll need:

1/5 dollops of coconut milk (different brands–I like em all)

pieces of a frozen banana (I used all mine so just used a fresh one.  Still good)

frozen strawberries

OPTIONAL:  other types of fruit.  Once you make it once, you’ll go nuts on different fruit.  I like to add a couple mango pieces.

I know, terrible pic.  SHAKE the can of coconut milk, and I open it and put it into a tupperware container to shake again and store the extra.  I took a dollop and a half of coconut milk.  (you can always add more later)  Put in the milk first, and it will blend better.

Add a small banana chunk.  Preferably a couple frozen slices.  (I grab older bananas, slice them, and put them in the freezer for later usage.) :)

add 3 strawberries.  That seems to be juuust right for me.

Add a couple of mango pieces (or pineapple, grapes, raspberries, you name it!)

Don’t forget to lid it.  Now press the ice crush, and blend away til you get a rolling blend.  It will have an ice cream-type consistency!  I DON’T recommend it, but I have a spoon handy to give it some assistance.  The thicker the better.  If it doesn’t roll after a few tries, add another dollop of coconut milk.

We serve our ice cream in mugs.  So grab your mug, and savor every bite.  I LOOOVE this one.  Thanks, Katy, good recipe.
